- 8 large pink lady apples, peeled, cored, cut into thick wedges
- 1/4 cup caster sugar
- 1 1/2 cups frozen cherries, thawed, halved
- Vanilla ice-cream, to serve
Crumble Topping
- 100g butter, chilled, chopped
- 1/3 cup brown sugar
- 2 tablespoons plain flour
- 2 cups traditional rolled oats
- 1/2 cup natural sliced almonds
Method
- Step 1 Blend custard powder with 1/4 cup milk in a medium saucepan until smooth and combined. Place over medium-high heat. Gradually whisk in remaining milk. Cook, stirring constantly, until mixture just starts to boil. Reduce heat to low. Simmer, stirring constantly, until mixture thickens and coats the back of the spoon. Remove from heat. Stir in chocolate until smooth. Transfer to a heatproof bowl. Cover surface with plastic wrap. Set aside for 20 minutes to cool. Refrigerate for at least 2 hours or until cold and set.
- Step 2 Preheat oven to 180C/160C fan-forced.
- Step 3 Place apple, caster sugar and 1 tablespoon water in a large saucepan over medium-high heat. Cover. Cook for 8 minutes or until apple just starts to soften. Stir in cherries. Cook for 1 minute.
- Step 4 Meanwhile, make Crumble Topping. Place butter, brown sugar and flour in a bowl. Using fingers, rub mixture together to combine. Add oats and almonds. Toss together to combine.
- Step 5 Using a slotted spoon, transfer apple mixture to a 26cm round baking dish. Dollop with cold custard. Sprinkle with crumble topping. Bake for 35 to 40 minutes or until crumble is golden and apple is tender. Stand for 10 minutes. Serve with vanilla ice-cream.
