- 700g Steggles chicken breast fillets, cut into 3cm pieces
- 1 cup buttermilk
- 1 cup cornflake crumbs
- 1 teaspoon mild paprika
- 1 teaspoon garlic salt
- 1/2 teaspoon dried mixed herbs
- 1/2 teaspoon cracked black pepper
- Olive oil cooking spray
- Barbecue sauce, to serve
Method
- Step 1 Preheat oven to 200°C/180°C fan-forced. Line a baking tray with baking paper.
- Step 2 Place chicken in a large glass or ceramic bowl. Add buttermilk. Toss to coat.
- Step 3 Combine cornflake crumbs, paprika, garlic salt, herbs and pepper in a bowl. Remove 1 piece of chicken from buttermilk, shaking off excess. Coat chicken in crumb mixture. Place on prepared tray. Repeat with remaining chicken and crumb mixture. Spray chicken with oil.
