- Creme fraiche, to serve
- Sliced banana, to serve
Banana ice-cream
- 6 large black or very ripe bananas, peeled, sliced, frozen
- 60ml (1/4 cup) lemon juice
Candied walnuts
- 430g (2 cups) caster sugar
- 40g butter
- 85g (3/4 cup) walnuts, halved
Method
- Step 1 Preheat oven to 160C/140C fan forced. Brush a 7cm-deep, 11 x 21cm (base measurement) loaf pan with melted butter. Line the base and sides with baking paper.
- Step 2 Sift the flour into a bowl. Add the sugar and cinnamon. Make a well in the centre. Add the eggs, mashed banana, oil and buttermilk. Stir until just combined. Pour into prepared pan. Smooth surface. Bake for 1 hour 20 minutes or until a skewer inserted into the centre comes out clean. Cool in pan for 20 minutes before turning onto a wire rack to cool completely.
- Step 3 Meanwhile, process frozen banana in a food processor with the lemon juice, scraping down sides frequently, until mixture is smooth and resembles soft serve ice-cream. Place in a metal container. Place in the freezer for 2 hours or until firmed slightly, but still scoop-able.
