- 700g potatoes, peeled, chopped
- 1 tablespoon butter
- 1 small leek, white part only, sliced

- 1/3 cup grated parmesan cheese
- 8 thick beef sausages
- 1 tablespoon olive oil
Relish - makes 1 1/2 cups
- 1 tablespoon olive oil
- 1/2 red onion, finely chopped
- 2 red capsicum, cut into 1cm cubes
- 1 large tomato, chopped
- 1 garlic clove, crushed
- 1/4 cup sultanas
- 1/4 cup brown sugar
- 1/3 cup white wine vinegar
Method
- Step 1 Make relish: Heat oil in a saucepan over medium heat. Add onion. Cook for 3 minutes, or until soft. Add capsicum. Cook for a further 2 minutes. Stir in tomato, garlic, sultanas, sugar and vinegar. Bring to the boil. Cover. Reduce heat to low. Simmer for 40 to 50 minutes, or until thickened. Set aside to cool.
- Step 2 Bring a saucepan of water to the boil. Add potatoes. Cook for 7 to 10 minutes, or until tender. Drain. Set aside.
- Step 3 Return saucepan to heat. Add butter and leek. Cook for 2 minutes. Return potatoes to saucepan with milk, parmesan, and salt and pepper. Mash.
- Step 4 Heat a chargrill, barbecue plate or frying pan over medium high heat. Brush sausages with oil. Cook for 10 minutes, turning, or until cooked through.
