- Olive oil spray
- 1 x 110g pkt goats cheese
- 2 tablespoons thickened cream
- 1/4 cup chopped fresh basil
- 2 x 200g pkts sliced smoked trout
- Small fresh basil leaves, to serve
Method
- Step 1 Preheat oven to 170°C. Line 2 baking trays with non-stick baking paper. Place the bread on the trays. Spray with oil. Bake, turning once, for 15 minutes or until crisp. Set aside to cool completely.
- Step 2 Meanwhile, combine goats cheese, cream and chopped basil in a bowl.
- Step 3 Spread the crostini with goats cheese mixture. Top with trout and basil leaves.
