Ingredients
- 3/4 cup traditional rolled oats
- 1/4 cup dry roasted hazelnuts, chopped
- 1/4 cup pumpkin seeds (pepitas)
- 1 tablespoon sesame seeds
- 1/3 cup maple syrup
- 1 tablespoon canola oil
- 1/2 teaspoon mixed spice
- 300g packet frozen mixed berries
- 2 teaspoons icing sugar mixture
- 1 1/3 cups reduced-fat strawberry yoghurt
Method
- Step 1 Preheat oven to 160°C/140°C fan-forced. Line 1 large baking tray with baking paper. Combine oats, hazelnut, pumpkin seeds and sesame seeds in a bowl. Combine maple syrup, oil and mixed spice in a jug. Pour over oat mixture. Stir to combine.
- Step 2 Spread oat mixture evenly on prepared tray. Bake for 25 to 30 minutes, stirring every 5 minutes, or until just golden. Cool completely on tray.
- Step 3 Meanwhile, combine berries and sugar in a bowl. Set aside for 1 hour or until berries are thawed and mixture is syrupy.
- Step 4 Spoon 2 tablespoons oat mixture into each of four 1 cup-capacity glasses. Top each with 2 tablespoons yoghurt and 2 tablespoons berry mixture. Repeat with oat mixture and remaining yoghurt and berry mixture. Lightly sprinkle with remaining oat mixture. Serve.
