- Step 1 Cook the bacon, stirring often, in a non-stick frying pan over medium heat for 10 minutes or until golden and crisp. Transfer to a plate lined with paper towel to drain.
- Step 2 Cook the pasta in a large saucepan of salted boiling water, following the packet directions, until al dente. Drain and set aside to cool.
- Step 3 Place the pasta in a large bowl. Add the bacon, mayonnaise, lemon rind, 2 tablespoons lemon juice and chives. Season and toss until combined. Add the tomato and half the avocado.
