- 4 bacon rashers
- 3 Coles Australian Free Range Eggs
- 2 tbs thickened cream
- 1 tbs chopped chives
- 2 Coles Soft Wraps
- 60g pkt Australian Baby Spinach & Rocket
- 1/3 cup (40g) grated tasty cheddar
- 2 tsp Thai chilli jam
Method
- Step 1 Cook the bacon in a non-stick frying pan over medium-high heat for 2 mins each side or until golden brown. Transfer to a plate lined with paper towel. Reduce heat to medium-low.
- Step 2 Whisk the eggs, cream and chive in a jug. Season. Pour into pan and use a wooden spoon to stir gently for 3 mins or until almost set.
- Step 3 Top the wraps with the spinach and rocket, cheddar, egg mixture, jam and bacon. Roll up the wraps. Cook in a clean frying pan over high heat for 1-2 mins each side or until toasted and heated through.
