- 150g blue cheese, coarsely chopped
- 375g broccoli, trimmed, cut into small florets
- 1/2 cup coarsely grated parmesan
- 1/2 cup panko breadcrumbs
- Olive oil spray

- Step 1 Preheat oven to 200C (180C fan-forced)
- Step 2 Cook the macaroni in a large saucepan of salted boiling water until al dente. Drain, reserving 1½ cups of the cooking liquid.
- Step 3 Meanwhile, melt the butter in a large saucepan over high heat. Cook bacon, leek and thyme, stirring, for 4 mins or until the leek is soft. Add flour and cook, stirring, for 2 mins or until the mixture comes together.
- Step 4 Gradually add reserved cooking liquid and milk to leek mixture, stirring until smooth. Cook, stirring, for 4 mins or until the sauce boils and thickens. Stir in the blue cheese and season. Stir in the broccoli and pasta.
- Step 5 Pour the mixture into a 2L ovenproof dish. Top with the parmesan and breadcrumbs. Spray with oil. Bake on the top shelf of oven for 25 mins or until golden and bubbling.
