- 60g (1/4 cup) cream cheese
- 80g mild blue cheese, crumbled
- Salt & freshly ground black pepper

- Step 1 Make the four cheese sauce: Melt the butter in a medium saucepan over medium heat. Add the flour and cook, stirring constantly with a wooden spoon, for 30 seconds or until mixture is smooth and begins to bubble. Remove from heat and gradually stir in the milk until smooth and combined. Return to medium heat and stir until mixture thickens and comes to the boil. Remove from heat.
