  • 60ml (1/4 cup) white wine vinegar
  • 1/2 lemon, juiced
  • 1/2 teaspoon Spanish smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/4 cup roughly chopped flat-leaf parsley
  • 100g feta, crumbled

  • Step 1 Preheat oven to 220C. Place capsicums, cut-side up, in a roasting pan. Scatter with thyme and one-third of the garlic, then drizzle with 2 tablespoons oil. Season with salt and pepper. Roast for 30 minutes or until tender. Discard thyme.
