Ingredients
- 8 lamb cutlets, trimmed
- 1/2 cup char siu (Chinese barbecue sauce)
- 1 tablespoon vegetable oil
- 2 eggs, lightly beaten
- 100g ham, finely chopped
- 1 garlic clove, crushed
- 2 1/2 cups cooked jasmine rice
- 310g can corn kernels, drained
- 1/2 cup frozen peas
- 2 tablespoons soy sauce
- 4 green onions, thinly sliced diagonally

- Step 1 Combine lamb and barbecue sauce in a large, shallow dish. Turn to coat. Set aside.
- Step 2 Heat oil in a medium non-stick frying pan on high. Add the eggs, swirling to form an omelette. Remove, roll up, slice and return to wok.
