- 1/4 cup pure maple syrup
- 500g smooth ricotta
- 1/3 cup caster sugar
- 1 teaspoon finely grated orange rind
- Orange zest, to serve
- Toasted flaked almonds, to serve
Cherry compote
- 2/3 cup caster sugar
- 1 cinnamon stick
- 1 teaspoon ground ginger
- 1/4 cup orange juice
- 300g fresh cherries, stems removed, pitted, halved
Method
- Step 1 Preheat oven to 180C/160C fan-forced. Line a large baking tray with baking paper.
- Step 2 Combine flour, coconut, brown sugar and oats in a large bowl. Stir in butter and maple syrup. Stir to combine. Transfer mixture to prepared tray. Press out to form a 22cm circle. Bake for 20 minutes or until starting to brown around the edges. Cool completely on tray.
- Step 3 Meanwhile, make Cherry compote: Place caster sugar, cinnamon, ginger, orange juice and 1/4 cup cold water in a medium saucepan over medium heat. Stir for 2 to 3 minutes or until in season cherries sugar has dissolved. Increase heat to medium-high. Bring to a simmer. Simmer for 2 minutes. Stir in cherries. Remove from heat. Cool completely. Discard cinnamon.
- Step 4 Using an electric mixer, beat ricotta, sugar and orange rind until smooth. Just before serving, spread ricotta mixture over tart base. Top with cherry compote. Sprinkle with orange zest and toasted almond flakes. Serve.
