  • Step 1 Preheat oven to 180C/160C fan-forced. Line a large baking tray with baking paper.
  • Step 2 Combine flour, coconut, brown sugar and oats in a large bowl. Stir in butter and maple syrup. Stir to combine. Transfer mixture to prepared tray. Press out to form a 22cm circle. Bake for 20 minutes or until starting to brown around the edges. Cool completely on tray.
  • Step 3 Meanwhile, make Cherry compote: Place caster sugar, cinnamon, ginger, orange juice and 1/4 cup cold water in a medium saucepan over medium heat.
