- 2 tablespoons olive oil
- 2 green onions, thinly sliced
- 1 long green chilli, finely chopped
- 1/2 cup finely grated cheddar
- Sour cream, to serve

- Step 1 Preheat oven to 200C/180C fan-forced. Place potatoes on a baking tray. Drizzle with oil. Season with salt and pepper. Bake for 45 minutes or until tender. Set aside for 5 minutes to cool slightly. Increase oven temperature to 220C/200C fan-forced.
