- 3 tomatoes, diced
- 1 shallot, sliced
- 1 avocado, flesh diced
- 1/4 cup chopped fresh coriander, plus extra to garnish
- 2 teaspoons fresh lime juice
- 1 tablespoon olive oil
- 1 1/3 cup coarsely grated tasty cheese
- 8 flour tortillas
- 1/2 Coles barbecued chicken, shredded
- 1 small fresh red chilli (deseeded if desired), finely chopped
Method
- Step 1 Combine the tomato, shallot, avocado, coriander, lime juice and half the oil in a bowl. Season with salt and pepper.
- Step 2 Sprinkle half of the cheese over 4 of the tortillas. Top with the chicken and sprinkle with the chilli followed by the remaining cheese and the remaining tortillas.
- Step 3 Heat 1/2 teaspoon of the remaining oil in a large non-stick frying pan over medium heat. Carefully add 1 tortilla stack and cook for 2 minutes each side or until golden. Repeat with the remaining oil and tortilla stacks.
- Step 4 Cut the quesadillas into wedges. Divide between serving plates and serve with the salsa.
