- Step 1 Combine flour and salt in a large bowl. Make a well in the centre. Whisk together the milk and egg in a jug. Gradually whisk milk mixture into the flour mixture until well combined and smooth. Cover batter with plastic wrap and place in the fridge for 30 minutes to rest.
- Step 2 Meanwhile, half-fill a large frying pan with cold water. Cover and bring to the boil over high heat. Reduce heat to low. Add the chicken and simmer, covered, for 15 minutes or until cooked through. Transfer the chicken to a plate and set aside for 15 minutes to cool. Shred into thin strips.
