  • 1 tablespoon fish sauce
  • 2 tablespoons palm sugar
  • 1 tablespoon lime juice
  • 600g Coles RSPCA Approved chicken breast fillets, thinly sliced
  • 150g snow peas, trimmed
  • 450g pkt hokkien noodles
  • 1 long red chilli, extra, thinly sliced
  • 1/3 cup coriander leaves, to serve
  • 4 spring onions, green part only, thinly sliced

Method

  • Step 1 Heat oil in a wok over medium heat. Add laksa paste. Cook for 2 mins or until fragrant. Add coconut milk, stock, chopped chilli, fish sauce, palm sugar and lime juice. Bring to the boil. Simmer for 10 mins.
