Ingredients
- 500ml thickened cream
- 100g good quality dark chocolate buttons
- 1/2 teaspoon ground chilli
- 1/8 teaspoon ground cinnamon
- 50g sugar, plus extra for toffee
- 4 egg yolks
Method
- Step 1 Preheat fan forced oven to 170C (150C fan-forced)
- Step 2 Heat cream in saucepan over medium heat until just below simmering point, turn off heat add chocolate and stir through until well combined and mixture is smooth.
- Step 3 Add chilli and cinnamon and stir through.
- Step 4 Whisk together 50g sugar and egg yolks until yolks appear pale and thick.
- Step 5 Add warm cream mixture to yolks and whisk gently to combine. Add 1/2 cup of mixture into each individual serving dish.
- Step 6 Place dishes into a deep baking tray and place in oven. Add very hot water to baking tray until water is halfway up the sides of the serving dishes. Cover whole tray in foil and bake for 30 – 40 minutes, until custard is set but still wobbly. Remove from oven and allow to cool completely in fridge.
- Step 7 Before serving, add 1-2 teaspoons of sugar on top of each brulee. Tap sugar around the dish to cover the entire surface and carefully melt the sugar to create a hard caramel layer using a blow torch. Alternatively heat grill to 200 degrees and place dishes in oven until sugar melts. Remove and allow brulees to cool slightly before serving.
