- 350g green beans, topped, halved crossways

- 2 garlic cloves, peeled
- 2-3 long fresh red chillies, halved, deseeded
- 2 teaspoons light olive oil
- 1/2 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon dried shrimp paste
- Salt & freshly ground black pepper
Method
- Step 1 Cook beans in a saucepan of salted boiling water for 2-3 minutes or until bright green and tender crisp. Drain.
- Step 2 Meanwhile, place the eschalots, garlic, chilli, oil, coriander, turmeric and shrimp paste in the bowl of a food processor and process until a smooth paste forms.
- Step 3 Heat a medium saucepan over medium heat. Add the eschalot mixture and cook, stirring, for 2 minutes or until fragrant. Add the beans and toss until well combined and hot. Taste and season with salt and pepper. Transfer to a serving bowl and serve immediately.
