  • 8 Mission Multi-Grain Tortillas
  • 200g tasty cheese, grated
  • Cooking spray
  • 6 tomatoes, finely diced
  • 1 red onion, finely diced
  • 1/4 cup fresh coriander, chopped
  • 1-2 mild green chillies, seeded and finely chopped
  • 1 tablespoon olive oil
  • 1 teaspoon salt

Method

  • Step 1 Combine all ingredients for Pico de Gallo. Place in fridge to chill.
  • Step 2 Heat oil in a frying pan over medium-high heat. Cook the mince for 5-6 minutes and season with salt and pepper. Place the mince in a medium-sized bowl.
