Ingredients
- 1 cup caster sugar
- 6 small firm ripe pears, peeled
- 100g butter, chopped
- 200g Coles Brand dark cooking chocolate, chopped
- 2/3 cup brown sugar
- 2 Coles Brand free range eggs, lightly beaten
- 1/2 cup ground pecans
- 1 cup self-raising flour
- 1/4 cup cocoa powder
Chocolate Sauce
- 1 cup cream
- 200g Coles Brand dark cooking chocolate, chopped
- 1 tsp vanilla essence
Method
- Step 1 Preheat oven to 160C or 140C fan-forced. Grease 6 x 1 cup-capacity ovenproof dishes. Combine caster sugar with 8 cups water in a large saucepan and stir over low heat until dissolved. Add pears and bring to the boil. Reduce heat and simmer for 10-15 mins, or until tender but not mushy. Remove from pan, drain and cool.
- Step 2 Cut tops off pears crossways, about 5cm from the stalk, and set tops aside. Core pear bases and discard core. Puree pear flesh in a food processor until almost smooth. Measure 1 cup puree and keep the rest for another use.
- Step 3 Place butter, chocolate, then pear puree and brown sugar in a large saucepan, and stir over low heat until melted. Cool slightly. Add eggs and pecans to the pan and stir until combined. Add sifted flour and cocoa and fold through until just combined. Spoon into the prepared dishes. Place a pear top into each dish, sitting on top of the mixture (it will sink in slightly).
- Step 4 Bake for 25-30 mins, or until firm when touched gently on top.
- Step 5 For the chocolate sauce, combine all ingredients in a small saucepan and stir over low heat until melted and smooth. Serve sauce with puddings.
