- 125g soft butter

- 1 teaspoon vanilla extract
- 1 egg
- 1 cup (150g) plain flour
- 1/4 cup (75g) self-raising flour
- 1 teaspoon bicarbonate of soda
- 1/3 cup (35g) cocoa
- 125g unsalted peanuts
- 100g white chocolate bits
Method
- Step 1 Preheat oven to 180°C. Line 2 baking trays with non-stick baking paper.
- Step 2 Beat butter, sugar and vanilla together with electric beaters until pale and creamy. Add egg and beat until combined. Sift flours, cocoa and bicarbonate of soda together over butter mixture. Add peanuts and choc bits and mix well.
- Step 3 Roll tablespoons of mixture into balls. Place about 6 balls onto each prepared tray. Bake for 12 minutes. Remove from oven and cool on trays for 5 minutes before transferring to a wire rack to cool and firm completely. When cold, store in an airtight container.
