- 1 x 170g Mariani Islands dried fruit, coarsely chopped
- 1 x 100g pkt macadamia nuts, coarsely chopped
- 1 x 100g pkt glace multicoloured cherries, coarsely chopped
Method
- Step 1 Line twenty-four 30ml (1 1/2-tablespoons) capacity mini muffin pans with paper cases.
- Step 2 Cook the almonds in a small non-stick frying pan over medium heat, tossing, for 3-4 minutes or until toasted.
- Step 3 Combine the chocolate and cream in a small saucepan and stir constantly over medium-low heat for 10 minutes or until chocolate melts and mixture is smooth and combined. Remove from heat.
- Step 4 Add the toasted almonds, dried fruit, macadamia nuts and glace cherries to the chocolate mixture, and stir until well combined. Spoon among the prepared pans. Cover with plastic wrap and place in the fridge for 2-3 hours or until firm. Arrange on a large serving platter and serve immediately.
