- Step 1 Line a large baking tray with baking paper. Spray cookie cutters well with oil. Place on prepared tray.
- Step 2 Place sugar and 2 tablespoons cold water in a small saucepan. Place over low heat. Stir for 5 minutes or until sugar has dissolved. Bring to the boil. Boil, without stirring, until mixture reaches 150°C on a candy thermometer (sugar syrup should only be light golden in colour). Tint mixture red with food colouring.
- Step 3 Carefully pour toffee into prepared cutters until toffee is 5mm thick. Set asidefor 30 seconds to cool slightly. Sprinkle with cachous. Set aside for 5 to 6 minutes or until cool to touch and almost set. Carefully remove cutters. Set aside to cool completely. Serve.
