  • 2 garlic cloves
  • 150g red cherry tomatoes, halved
  • 150g yellow cherry tomatoes, halved
  • 3 large bocconcini, chopped or 12 cherry bocconcini
  • 1 tablespoon chopped fresh basil
  • 2 teaspoons fresh thyme sprigs, roughly chopped

Method

  • Step 1 Heat a chargrill pan or grill to high. Brush both sides of the bread with half the oil. Add to pan and chargrill until it has grill marks on both sides. While still warm, rub with a garlic clove.
