- 2 tablespoons honey
- 1.2kg chicken breast fillet, sliced through centre
- 2 tablespoons vegetable oil
- 2 teaspoons sesame oil
- 270g packet (40 pieces) wonton wrappers
- 3 Lebanese cucumbers, sliced, cut into thin strips
- 1 bunch coriander, leaves removed
Method
- Step 1 Combine 1/2 cup hoisin sauce, honey and 1 tablespoon water in a shallow ceramic dish. Add chicken, placing in a single layer. Turn to coat in marinade. Cover and refrigerate for 2 hours.
- Step 2 Preheat oven to 180°C. Line 2 baking trays with baking paper. Combine vegetable and sesame oils in a small bowl. Place wonton wrappers, in a single layer, onto trays. Brush with oil mixture. Bake for 10 minutes or until light golden. Transfer to a wire rack. Repeat with remaining wonton wrappers and oil.
- Step 3 Increase oven temperature to 200°C. Place chicken onto baking trays. Roast, basting every 10 minutes with marinade, for 25 to 30 minutes or until chicken is just cooked through. Set aside to cool. Shred.
