Ingredients
- 100g butter, chopped
- 1 cup brown sugar
- 1 cup chopped pitted dates
- 1 teaspoon mixed spice
- 1 teaspoon bicarbonate of soda
- 2 eggs, lightly beaten
- 1 1/2 cups self-raising flour, sifted
- 150g packet mixed nuts
- 1/2 cup grated carrot
- Icing sugar mixture, for dusting
Method
- Step 1 Preheat oven to 180C/160C fan-forced. Grease a 6cm-deep, 10cm x 20cm (base) loaf pan. Line base and sides with baking paper, allowing a 2cm overhang at long ends.
- Step 2 Place butter, sugar, dates, spice and 1 cup cold water in a saucepan over medium heat. Cook, stirring, for 4 minutes or until butter has melted and sugar dissolved. Bring to the boil. Remove from heat. Stir in bicarbonate of soda. Cool for 20 minutes.
- Step 3 Stir in eggs. Add flour, nuts and carrot. Stir to combine. Pour into prepared pan. Bake for 50 minutes or until a skewer inserted in centre comes out clean. Cool in pan for 10 minutes. Turn out onto a wire rack to cool completely. Dust with icing sugar. Serve.
