  • Step 1 Place dried fruit, juice, star anise and vanilla in a saucepan. Bring to the boil, reduce heat, cover and simmer for 10 mins, until plump.
  • Step 2 Discard vanilla pod and star anise. Transfer to a greased 20cm pie dish.
  • Step 3 Meanwhile, place flour, sugar, mixed spice and butter in a food processor and pulse until like fine breadcrumbs. Add egg yolk and enough water to form a dough.
  • Step 4 Turn out and bring together in a ball. Wrap and freeze for 30 minutes.
  • Step 5 Preheat oven to 200°C. Coarsely grate dough over the fruit. Bake for 25-30 mins until golden.
