Ingredients
- 500g dried fruit salad mix, roughly chopped
- 1 2/3 cups orange juice
- 3 star anise
- 1 vanilla pod, halved lengthways
- 1 cup plain flour
- 1/4 cup caster sugar
- 1/2 teaspoon mixed spice
- 50g butter, cubed
- 1 egg yolk
- 1-2 tablespoons cold water
Method
- Step 1 Place dried fruit, juice, star anise and vanilla in a saucepan. Bring to the boil, reduce heat, cover and simmer for 10 mins, until plump.
- Step 2 Discard vanilla pod and star anise. Transfer to a greased 20cm pie dish.
- Step 3 Meanwhile, place flour, sugar, mixed spice and butter in a food processor and pulse until like fine breadcrumbs. Add egg yolk and enough water to form a dough.
- Step 4 Turn out and bring together in a ball. Wrap and freeze for 30 minutes.
- Step 5 Preheat oven to 200°C. Coarsely grate dough over the fruit. Bake for 25-30 mins until golden.
