Ingredients
- 1 tablespoon vegetable oil
- 8 Coles RSPCA approved chicken drumsticks
- 1 brown onion, coarsely chopped
- 1 garlic clove, crushed
- 2 teaspoons finely grated ginger
- 500g jar Pataks butter chicken simmer sauce
- 400g can crushed tomatoes
- 1/2 cup (125ml) chicken stock
- 1/2 cup (125ml) coconut milk
- 150g green beans, coarsely chopped
- 1 tablespoon lemon juice
- 1/3 cup coriander leaves
- Steamed basmati rice, to serve
- Natural yoghurt, to serve
- Roti bread, optional, to serve
Method
- Step 1 Heat 2 teaspoons oil in a large frying pan over medium-high heat. Add chicken and cook, turning, for 5 mins, or until browned all over. Transfer to a plate.
- Step 2 Heat remaining oil in the pan. Add onion and cook for 5 mins, or until softened. Add garlic and ginger and cook, stirring, for 2 mins. Add simmer sauce, tomato, stock and coconut milk. Stir to combine. Bring to the boil. Reduce heat to medium-low. Return chicken to the pan and simmer, covered, for 20 mins.
- Step 3 Add beans and cook, uncovered, for 10 mins or until chicken is cooked through. Add lemon juice and coriander leaves. Season with salt and pepper.
- Step 4 Serve butter chicken with basmati rice, natural yoghurt and warmed roti bread.
