Ingredients
- 440g packet fresh thin hokkien noodles
- 1 tablespoon peanut oil
- 500g chicken stir-fry pieces
- 1 red capsicum, deseeded, thinly sliced
- 1 bunch broccolini, halved lengthways
- 1 cup fresh basil leaves
- Sliced green shallots, to serve
Ultimate stir-fry sauce
- 60ml (1/4 cup) sweet chilli sauce
- 60ml (1/4 cup) oyster sauce
- 1 tablespoon finely grated ginger
- 2 garlic cloves, finely grated
- 2 tablespoons warm water
Method
- Step 1 Place the noodles in a heatproof bowl. Pour over boiling water to cover. Set aside for 5 minutes to soften. Drain.
- Step 2 Meanwhile, for the ultimate stir-fry sauce, combine all the ingredients in a bowl.
- Step 3 Heat the oil in a wok over high heat until smoking. Add half the chicken and stir-fry for 2 minutes or until golden. Use a slotted spoon to remove and set aside. Repeat with the remaining chicken, reheating the wok between batches.
