- 1 baby cos, leaves separated
- 1 witlof, finely shredded
- 1 avocado, sliced
- 80g fetta, crumbled
- 1/4 cup chopped fresh flat-leaf parsley leaves
Charred lime dressing
- 3 limes, halved
- 1/3 cup light-flavoured extra virgin olive oil
- 1 tablespoon maple syrup
- 1 teaspoon dried oregano
Method
- Step 1 Heat oil in a non-stick frying pan over medium heat. Add falafel. Cook, stirring occasionally, for 5 minutes or until golden and crisp. Set aside to cool.
