- 100g (1 cup) hazelnut meal
- 140g (2/3 cup) caster sugar
- 1 tablespoon Frangelico hazelnut liqueur
- 1/2 teaspoon Chinese five spice
- 2 eggs, separated
- Double cream, to serve
Nutella sauce
- 100g (1/3 cup) Nutella hazelnut spread
- 80ml (1/3 cup) thickened cream
- 100g dark chocolate, finely chopped
Method
- Step 1 Preheat oven to 180C/160C fan forced. Grease six 85ml (3⁄4 cup) dariole moulds or Texas muffin pans and line the bases with baking paper.
- Step 2 Combine chocolate, butter, water and cocoa in a heatproof bowl over a saucepan of simmering water. Cook, stirring, for 5 minutes or until mixture is melted and smooth. Remove from heat. Add hazelnut meal, sugar, liqueur, five spice and egg yolks. Stir to combine.
