- 155g (3/4 cup) caster sugar
- 1 teaspoon vanilla essence
- 3 eggs
- 100g (1 cup) almond meal
- 150g (1 cup) plain flour
Method
- Step 1 Preheat oven to 180°C. Brush a 20 x 30cm (base measurement) lamington pan with melted butter to lightly grease. Line the base and 2 long sides with non-stick baking paper, allowing the sides to overhang.
- Step 2 Place the flour, icing sugar and butter in the bowl of a food processor and process until the mixture resembles fine breadcrumbs. Add the water and process until the mixture just comes together. Spoon into the prepared pan, pressing evenly over the base. Place in the fridge for 20 minutes to rest. Bake in the oven for 15 minutes or until light golden. Set aside for 30 minutes to cool.
