- 4 Coles Australian Free Range Egg whites
- 3 cups (450g) self-raising flour
- 1/2 cup (125ml) milk
- 1 cup Coles Rainbow Sprinkles
- 100g marshmallows, quartered
- Coles Rainbow Sprinkles, extra, to decorate
White chocolate frosting
- 200g butter, softened
- 2 1/2 cups (400g) icing sugar mixture
- 1 tablespoon milk
- 100g white chocolate, melted, cooled
Method
- Step 1 Preheat oven to 170C. Grease and line the base and sides of two 20cm round (base measurement) cake pans with baking paper, allowing paper to extend 5cm above the edge.
- Step 2 Use an electric mixer to beat butter, sugar and vanilla in a large bowl until light and fluffy.
- Step 3 Add the eggs and egg whites, 1 at a time, beating well after each addition. Beat for a further 1 min.
- Step 4 Add half the flour and milk to the butter mixture and stir until combined. Repeat with remaining flour mixture and milk.
- Step 5 Stir in sprinkles. Pour mixture evenly into prepared pans. Bake for 40-45 mins or until a skewer inserted into the centre of the cakes comes out clean.
- Step 6 Set aside in pans for 10 mins to cool. Turn out onto wire rack to cool completely.
- Step 7 Meanwhile, to make the white chocolate frosting, use an electric mixer to beat the butter in a bowl until very pale and creamy. Gradually add the icing sugar, beating well after each addition. Add milk and beat to combine. Add the white chocolate and beat until smooth.
- Step 8 Spread some of the white chocolate frosting on a cake platter and place 1 cake on frosting. Use a palette knife to spread 1 cup of frosting over the cake to form a smooth even layer. Top with the remaining cake. Spread remaining frosting over top and sides of cake.
- Step 9 Decorate cake with marshmallows and extra sprinkles.
