  • 500g Lilydale Free Range Chicken Breast, thinly sliced

  • 5cm piece fresh ginger, peeled, cut into matchsticks
  • 1 medium red onion, cut into thin wedges
  • 1 medium red capsicum, thinly sliced
  • 1 medium green capsicum, thinly sliced
  • 1 medium carrot, peeled, cut into matchsticks
  • Chopped roasted peanuts, to serve

  • Step 1 Place noodles in a heatproof bowl. Cover with boiling water. Stand for 1 to 2 minutes or until tender. Using a fork, separate noodles. Drain. Rinse under cold water.
