- 1/4 cup (90g) golden syrup
- 1/4 cup (55g) brown sugar
- 1 cup (150g) plain flour
- 1/4 cup (35g) self-raising flour
- 2 tsp ground ginger
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp ground cloves
- 1 Coles Australian Free Range Egg yolk
- Royal icing or designer icing, to decorate
Method
- Step 1 Preheat oven to 180°C. Combine the butter, golden syrup and sugar in a saucepan over low heat. Cook, stirring, for 3 mins or until the butter melts and mixture is smooth. Cool slightly.
- Step 2 Transfer butter mixture to a large bowl. Add the combined flour, ginger, cinnamon, nutmeg, cloves and egg yolk and stir to combine. Turn the dough onto a lightly floured surface and knead until smooth. Cover with plastic wrap. Place in fridge for 30 mins or until firm.
- Step 3 Line a baking tray with baking paper. Roll out the dough on a lightly floured surface to a 3mm-thick disc. Use 2cm, 4cm and 6cm star-shaped cutters to cut stars from dough, rerolling dough scraps. Place on lined tray. Bake for 10 mins or until light golden. Set aside on the tray to cool completely. Decorate with icing.
