- 1/4 cup 100% strawberry fruit spread
- Extra 1 tablespoon buttermilk, for brushing
- Pure icing sugar, to serve
Method
- Step 1 Preheat oven to 200C/180C fan-forced. Line 2 baking trays with baking paper.
- Step 2 Combine flour and sugar in a bowl. Rub in butter until mixture resembles fine crumbs. Make a well. Add buttermilk. Stir to form a soft, sticky dough. Turn dough onto a lightly floured surface. Knead gently until dough comes together and is smooth, adding extra flour if needed.
- Step 3 Roll out dough between 2 sheets of baking paper to form a 22cm x 35cm rectangle. Leaving a 1cm border along each edge, spread Freenut butter over dough. Top with fruit spread, spreading to cover evenly. Roll up dough from 1 long side to enclose filling. Dough will be quite soft and sticky. Trim ends.
