Ingredients
- 80g packet pistachio kernels
- 5 egg whites, lightly beaten
- 1 1/2 cups almond meal
- 1 1/2 cups gluten-free pure icing sugar, sifted
- 2/3 cup gluten-free plain flour
- 150g butter, melted, cooled
- 1 tablespoon finely grated orange rind
- 1 tablespoon orange juice
Method
- Step 1 Preheat oven to 190C/ 170C fan-forced. Grease and flour (see note) three 12-hole, 1 1/2 tablespoon-capacity mini muffin pans. Roughly chop 1/4 cup pistachios.
- Step 2 Combine egg white, almond meal, icing sugar, flour, chopped pistachios, butter, orange rind and orange juice in a bowl. Divide the mixture evenly between holes of prepared pans. Top with remaining pistachios.
- Step 3 Bake for 15 minutes or until golden and just firm to touch. Stand in pans for 2 minutes. Turn onto a wire rack to cool. Serve.
