- 300g pumpkin, peeled, seeds removed, and cut into 1.5cm cubes

- 1 red onion, thinly sliced
- 8 eggs, lightly beaten
- 1 cup grated tasty cheese
- 2 tablespoons chopped chives
- 200g sliced leg ham, shredded
- 1/2 cup grated parmesan
