- 24 medium green king prawns, peeled leaving tails intact, deveined
- 4 nori sheets, cut into 5mm strips
- 125ml (1/2 cup) pure honey
- Steamed jasmine rice, to serve
Method
- Step 1 Line 2 baking trays with paper towel. Combine the water, egg and half the sesame seeds in a bowl. Add the flour and salt, and whisk until just combined.
- Step 2 Heat the oil in a wok over high heat to 180°C (when oil is ready, a cube of bread will turn golden in 15 seconds). Using tongs, dip one-quarter of the prawns, one at a time, into the batter. Add to wok and deep-fry for 2 minutes or until golden, crisp and just cooked through. Transfer to prepared tray. Repeat with remaining prawns in 3 batches, reheating oil between each batch. Remove oil from heat and add nori strips. Deep-fry for 30 seconds or until crisp. Drain on paper towel.
