- 2/3 cup caster sugar (150g)
- 3 eggs
- 1/4 cup honey, plus 1/4 cup extra
- 1 1/2 cups self-raising flour, sifted
- 4 small Granny Smith apples
- 2 teaspoons demerara sugar

- Step 1 Preheat oven to 180C (160C fan-forced). Grease an 8-hole, 3/4-cup capacity mini loaf pan.
- Step 2 Using an electric mixer, beat butter and caster sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Add honey and beat to combine. Fold in flour until combined. Fill prepared pans, smoothing top with a spatula.
