- 400g lamb mince
- 2 x 30cm pre-prepared pizza bases
- 1/3 cup pizza sauce
- 1 1/3 cups grated mozzarella cheese
- 150g chargrilled red capsicum, cut into strips
- 1 small red onion, thinly sliced
- 3/4 cup pitted kalamata olives, halved lengthways
- 1/3 cup finely grated parmesan cheese
Method
- Step 1 Preheat oven to 220°C. Heat oil in a frying pan over high heat. Add lamb mince. Cook for 4 to 6 minutes, or until browned. Transfer mince to a bowl lined with paper towels to drain.
- Step 2 Place pizza bases onto 2 baking trays. Spread with pizza sauce, leaving a 2cm border.
- Step 3 Sprinkle each pizza with 1/2 cup of mozzarella. Arrange capsicum, onion, olives and mince over pizzas. Sprinkle with parmesan and remaining mozzarella.
- Step 4 Bake for 10 to 15 minutes, swapping halfway through, or until golden. Serve.
