  • 270ml can coconut milk
  • 2 tbs mirin

  • 2 tsp coconut oil
  • 2 tsp sesame oil
  • 150g white sourdough bread, crusts removed, cut into 2cm pieces
  • 2 tsp mixed or white sesame seeds
  • 1/4-1/2 tsp dried chilli flakes
  • 2 seaweed snacks, finely chopped
  • 1/2 tsp sea salt flakes

Method

  • Step 1 Heat the coconut oil in a saucepan over medium-low heat. Add onion, carrot and cook, stirring, for 5 minutes or until softened. Add ginger and garlic. Cook, stirring, for 1 minute or until aromatic. Add pumpkin. Cook, stirring, for 2 minutes. Stir in miso then pour in stock. Bring to the boil. Simmer, partially covered, stirring occasionally, for 25-30 minutes or until pumpkin is very tender. Remove from heat.
  • Step 2 Meanwhile, to make the sesame croutons, heat coconut oil and sesame oil in a large frying pan over medium-high heat. Add bread. Cook, stirring often, for 4-5 minutes or until golden and crisp. Add sesame, chilli, to taste, seaweed and salt. Cook for 30 seconds or until sesame is golden and aromatic.
  • Step 3 Use a stick blender to blend the soup until smooth. Stir in the coconut milk and mirin. Blend again until just combined.
