Ingredients
- 800g Coles Lamb Mince
- 2 cloves garlic, crushed
- 1 small onion, very finely chopped
- 1/4 cup flat-leaf parsley, finely chopped
- 2 teaspoons ground cumin
- 1 teaspoon ground coriander
- 200 g Coles Simply Less Light Tzatziki Dip
- 1/3 cup fresh mint leaves, finely chopped
- 1 clove garlic, finely chopped
- Olive oil spray
- Lemon wedges, to serve
Method
- Step 1 Combine mince, garlic, onion, parsley, cumin and coriander in a large bowl. Season. Mix until well combined. Form lamb mixture into 12 x 8cm sausage shapes. Place on a tray. Cover and refrigerate for 30 minutes. Soak 12 small bamboo skewers in cold water.
- Step 2 Meanwhile, place tzatziki, mint and garlic in a bowl. Stir to combine. Cover and refrigerate until ready to serve.
- Step 3 Thread a skewer through the centre of each lamb sausage. Preheat a greased barbecue plate on medium heat. Spray meat skewers with oil. Barbecue, turning occasionally, for 8-10 minutes until cooked through. Transfer to a large tray, cover with foil and rest for 5 minutes. Serve with minted tzatziki and lemon wedges.
