Chocolate base
- 250g plain chocolate biscuits
- 80g unsalted butter, melted
Method
- Step 1 Preheat oven to 180°C/160°C fan-forced.
- Step 2 Make Chocolate base: Using a food processor, process biscuits until finely chopped. Add butter. Pulse until well combined. Press mixture over the base and side of a 23cm-round pie dish. Bake for about 10 minutes or until base darkens slightly. Cool completely on a wire rack.
- Step 3 Combine white sugar, cornflour and salt in a medium saucepan. Whisk in milk and espresso powder. Cook over medium-high heat, stirring constantly, for about 7 minutes or until bubbling and thick.
- Step 4 Whisk egg yolks in a medium heatproof bowl until combined. Pour in milk mixture in a slow, steady stream, whisking until completely incorporated. Return mixture to saucepan. Cook over medium heat, stirring constantly, for 30 seconds or until mixture comes to a simmer.
- Step 5 Remove from heat. Stir in coffee liqueur and vanilla. Add butter, 1 piece at a time, whisking until butter melts before adding next piece. Cool custard for about 10 minutes, in saucepan on a wire rack, whisking occasionally.
- Step 6 Pour custard into biscuit base. Cover surface with plastic wrap. Refrigerate for at least 4 hours (or overnight) or until custard filling is set and firm.
- Step 7 Place coffee beans in a snap-lock bag. Using a rolling pin, crush beans into pieces. Reserve 1 tablespoon of larger coffee bean pieces.
- Step 8 Whisk cream, icing sugar and extra espresso powder until stiff peaks form. Fold small coffee bean pieces into whipped cream mixture. Spread over pie. Sprinkle with reserved coffee bean pieces. Serve immediately.
