- 1 x 114g can masaman curry paste
- 1 x 1kg pkt frozen peeled prawn cutlets, thawed
- 1 x 400ml can coconut cream
- 2 tablespoons fresh lime juice
- Steamed white rice, to serve
- 1/2 cup fresh coriander leaves
- Lime wedges, to serve
Method
- Step 1 Heat oil in a heavy-based saucepan over medium-high heat. Add the shallot, ginger and curry paste and cook for 2 minutes or until aromatic.
- Step 2 Add prawns and stir-fry for 2 minutes. Add the coconut cream and lime juice, and bring to the boil. Cook for 6 minutes or until the prawns curl and change colour and the sauce thickens.
