  • 2 tablespoons lemon juice
  • 1 tablespoon fish sauce
  • 1 tablespoon caster sugar
  • 1 teaspoon finely grated lime rind
  • 2 tablespoons lime juice
  • 1 tablespoon peanut oil
  • 1/2 cup fresh coriander leaves, extra, to serve
  • 1 long red chilli, thinly sliced diagonally, to serve

Method

  • Step 1 To make Basic mince mixture; Combine all ingredients in a large bowl. Season with salt and pepper.Set aside 1/2 for another use (See notes). Cover with plastic wrap.

Stand for 5 minutes or until cool enough to handle. Cut into quarters. Transfer to a large heatproof bowl. Add 1/2 the peanuts and green onion. Toss to combine. Set aside.
  • Step 5 Heat coconut cream in a small saucepan over medium heat. Stir in lemon juice, fish sauce and sugar. Reduce heat to low. Bring to a simmer. Simmer gently, stirring, for 2 minutes or until heated through. Remove from heat. Stir in remaining peanuts.
