- 125g unsalted butter, chopped
- 1/2 cup honey
- 2 eggs, lightly beaten
- 2 cups wholegrain rolled oats
- 1/2 cup wholemeal self-raising flour
- 2 teaspoons ground mixed spice
- 1 cup chopped dried apricots
- 1 cup sultanas
- 3/4 cup dried apples, chopped
- 1/3 cup dried cranberries
- 1/3 cup sunflower kernels
- 1/3 cup pepitas
Method
- Step 1 Preheat oven to 180°C /160°C fan-forced. Grease a 3cm-deep, 20cm x 30cm lamington pan. Line base and sides with baking paper, extending paper 3cm from edges of pan on all sides.
- Step 2 Melt butter and honey together in a small saucepan over a low heat. Set aside to cool completely. Add eggs. Whisk to combine.
- Step 3 Place oats, flour, mixed spice, apricots, sultanas, apple, cranberries, sunflower kernels and pepitas in a large bowl. Stir to combine. Add butter mixture. Stir until well combined. Press mixture firmly into prepared pan. Bake for 25 to 30 minutes or until golden. Allow to cool completely in pan. Cut into 5cm squares. Serve.
