Ingredients
- 250g butter, softened
- 1 1/2 cups caster sugar
- 1 orange, rind finely grated, juiced
- 4 eggs, at room temperature
- 1/2 cup sour cream
- 1 1/2 cups self-raising flour
- 100g almond meal (ground almonds)
- 50g slivered almonds, toasted
Orange icing
- 250g cream cheese, softened
- 1 large orange, rind finely grated
- 1/3 cup pure icing sugar, sifted
Method
- Step 1 Preheat oven to 170C. Grease and line base of a 6cm deep, 22cm (base) round springform cake pan.
- Step 2 Using an electric mixer, beat butter, sugar and orange rind until light and fluffy. Add eggs, one at a time, beating well after each addition. Stir in sour cream. Sift flour over mixture. Stir to combine. Add almond meal and 2 tablespoons orange juice. Mix well.
- Step 3 Spread mixture into prepared pan. Bake for 1 to 1 1/4 hours or until a skewer inserted into the centre comes out clean. Stand in pan for 5 minutes before releasing side. Cool completely on a wire rack.
- Step 4 Make orange icing: Using an electric mixer, beat cream cheese and orange rind until smooth. Add icing sugar. Beat on low speed until combined.
- Step 5 Using a serrated knife, cut cake in half. Place base onto a cake platter. Spread one-third of icing over base. Sandwich with cake top. Spread remaining icing over top of cake. Sprinkle with slivered almonds. Serve.
