- 2 eggs
- Extra 2 egg yolks
- 2/3 cup caster sugar
- 80g butter, chopped
- 1 tablespoon finely grated orange rind
- 1/2 cup orange juice
Method
- Step 1 Make Orange Curd: Whisk eggs, yolks and sugar in a saucepan. Place over low heat. Add butter, rind and juice. Stir constantly for 5 minutes or until butter melts. Increase heat to medium. Cook, stirring, for 12 to 15 minutes or until mixture thickens (do not simmer). Strain into a heatproof bowl. Cover surface with plastic wrap. Stand for 30 minutes. Refrigerate for 2 hours.
- Step 2 Meanwhile, process butter, caster sugar, flour and custard powder in a food processor until fine crumbs form. Add egg. Process until dough comes together. Shape dough into 2 discs. Wrap in plastic wrap. Refrigerate for 1 hour or until firm.
- Step 3 Preheat oven to 160C/140C fan-forced. Grease 3 baking trays. Line with baking paper. Roll out 1 portion of dough between 2 sheets of baking paper until 5mm thick. Using a 5.5cm-fluted cutter, cut rounds from dough, re-rolling and cutting trimmings (see notes). Place, 4cm apart, on prepared trays. Bake for 10 minutes or until just firm but not browned. Stand for 5 minutes. Transfer to a wire rack to cool. Repeat with remaining dough disc.
- Step 4 Use 1 teaspoon curd to sandwich 2 cookies together. Repeat with remaining cookies and curd. Dust with icing sugar. Serve.
